I am having Mac os 10.11.5. I wish to install latest appium on it. Is appium dependent on Mac os version? So can I install latest appium on my current Mac os?

No dependency. You can proceed to install with any.

One caveat: iOS versions are limited by the version of Xcode you are using. Please check the tables in the following link for Mac OS/Xcode/iOS versioning and support:

If you are only testing Android, there is no such restriction.
