just in case did you build WDA for simulator manually? Add a bit more your error logs. Make sure you are with DEBUG log level on Appium server.

iiiiii why you use Appium GUI instead of Appium server ?

I always use it and launch Inspector from it
inspector yes. for tests use better appium server which installs via npm command.
PS for iOS 16 make sure you are with xCode 14 (ahh you are with it simulator! so you have it already)
