You will struggle to get the appium server connecting to an ios device, on Windows, because it requires xcode. I am guessing that is what is blocking you. I had to get a macbook just to do this job, and although it’s a hurdle, learning just enough to get by on setting up a mac is not that hard.
Is that why?
